Avocado On Toast?!

                                  

Yes, I know this sounds strange at first. Doesn't it just seem like a breakfast only a nutritionist or health freak would eat?

Well here's some news for you: you don't have to be a healthy eater to absolutely LOVE this recipe!!
                                  

I got my inspiration from a novel about a girl in the Florida Keys who got served "alligator-pear" toast for breakfast, and it was the norm there. I thought that was really cool so I decided to try it!
                                    

Here are the stats of Avocado vs. Peanut butter on toast:


  Peanut Butter (2 tbsp)          Avocado (1/2 fruit)
  • Calories = 200                                     Calories = 130       
  • Total Fat = 15g                                     Total Fat = 12g
  • Good fat(monounsaturated) = 13g Good fat(monounsaturated) = 8
  • Bad fat (saturated&trans) = 3g         Bad fat(saturated&trans) = 1g
  • Sodium = 40mg                                  Sodium = 5mg
  • Potassium = 208mg                           Potassium = 380mg
  • Carbs = 7g                                             Carbs = 6g

You may have noticed a few, no a LOT of nutrition components that avocados did better on. Avocados have less calories, less bad fats, less sodium, less carbs, and more potassium. Soo... they pretty much dominated peanut butter. 
                                      

The avocado is so creamy when you mash it that it's the perfect texture for spreading. Just please DO NOT for get to season with salt and pepper-- trust me on this. This toast is just so delicious! Go ahead and try it... I dare you!

Avocado Toast 


  • 1 slice toast
  • 1/2 a ripe avocado (or less, it's a huge serving!)
  • Salt and pepper, to taste
In a small bowl mash your avocado, along with the salt and pepper, with a fork until it reaches a spreadable consistency. Use a mini cookie scoop or a spoon to transfer from bowl to toast, and spread with a knife.
