Apple Pie Oatmeal

If you're in need of fall comfort food, you've come to the right place. What's more heart-warming than apple pie??

You could say pumpkin pie, Thanksgiving, or meatloaf (It's American "comfort food" right?!), but for me it's oatmeal and apples. And walnuts. I LOVE walnuts!

If you're feeling the Autumn blues (Hahaha, see what I did there?), this oatmeal will definitely satisfy your need for seasonal delicacies, AKA apple pie.

Apple Pie Oatmeal

  • 1/2 cup old-fashioned oats
  • 1 cup almond milk
  • 1/2 a large apple, chopped
  • 1/4 tsp cinnamon + more to taste
  • 1 tsp pure maple syrup
  • 1 tsp vanilla extract
  • dash nutmeg
  • handful walnuts
First, chop up your 1/2 apple and sprinkle some cinnamon on the cubes. Microwave your cubes until warm and slightly squishy, like a baked apple (Or you could bake the apples at 400 degrees for 40 mins like I did in the photo). Cook your oats and milk how you normally do in either microwave or stove-top. After the oatmeal is cooked, add in all ingredients, including the apples and enjoy! I like to top mine with whipped cream and some ground flax.
