Sometimes I just crave cake batter. No idea why, and I haven't eaten it for at least a year, but I know this particular vanilla-ey, sweet, and flour-ey taste as well as the back of my hand. And it's so delicious!
Oh wait, I lied. About me not eating cake batter for a year. Last week for Halloween I tried making some healthy cake pops with my doughnut hole maker. The recipe used stevia, coconut and almond flour, and applesauce yet it was sooooo good! They weren't sticking or molding into perfect round balls like a normal cake mix does, so I kept trying and altering for almost three hours. I added 2 or 3 eggs, a lot of Greek yogurt, and put a ton of hard work into them. And what does hard work equal?? Cake batter!! I definitely had my fair share of it, plus more. I got out a Dixie cup at one point to drink it (ew, right) but gave up on that and used a spoon instead. The sad thing was that none of the cake pops worked. :(
Well, this disaster has a bright side: inspiration for this recipe! I wanted to experience that same heavenly taste in cookie dough-ish form. On an apple or graham cracker. So I got out all my ingredients and experimented, and found a winner!
This cake batter dip is as scrumptious as it looks- and tastes like real funfetti, without any of the fake ingredients!

Healthy Cake Batter Dip
(Serves 1-2)
- 2 tbsps coconut flour
- 2 tbsps whole wheat flour
- 2 tsps natural protein powder (I use SFH Pure)
- 2 tsps stevia
- pinch baking soda
- 2 tbsps plain Greek yogurt
- 1/2 tsp vanilla extract
- 2 tbsps almond milk
Combine first 5 ingredients in a small bowl. Then add in Greek yogurt. Combine until all the yogurt clumps are gone. Then add in the vanilla extract and the almond milk, one tbsp at a time. Refrigerate or freeze for a few minutes to firm and cool down. Eat on apple slices, graham crackers, or whatever your heart desires! I think I'll try some on celery or carrots and see how it tastes, hehe.
