Cookie Dough Truffles

I haven't posted in a whole week, it's good to be back! Homework was terrible the last few days. Anyway, to make up for the two missing posts I have a really good recipe today. Cookie dough truffles!!

I've been wanting a good, healthy cookie dough truffle for a long time. The checklist running through my mind about how it had to be was:

- Taste like real cookie dough, and not the fake protein chickpea stuff.
- Have only whole grain flour. White flour acts just the same as sugar on your digestive system.
- Have no refined sugars. You all know how bad sugar is for you.
- Use coconut oil. It makes all cookie dough recipes taste better.

And guess what? I accomplished all those things!!

They are absolutely perfect for an after dinner treat. I just make em' when I'm finished, freeze for a few minutes, and enjoy. The smoothness of the filling, the sweet and doughey texture, mm they are just so perfect. And especially if you microwave one and it gets all gooey. *sigh.*

These truffles are literally so easy, and there's only one bowl! If you're hungry for cookie dough, this is your savior.

Cookie Dough Truffles

  • 3 tbsps coconut oil, melted
  • 3 tbsps pure maple syrup
  • 3/4 tsp vanilla extract
  • 9 tbsps whole wheat flour
  • scant 1/4 tsp salt
  • 3 tsps mini chocolate chips
For the dough, in a medium bowl combine the melted coconut oil, maple syrup, and vanilla extract. Then stir in the flour and salt until a dough forms. Add in chocolate chips here. Shape the dough into one big ball/square and freeze for 5-10 mins until hard but still shape-able.

In the meantime prepare your chocolate coating. Either use melted chocolate chips with a bit of coconut oil or 3 tbsps each of coconut oil, unsweetened cocoa powder, and pure maple syrup. For the homemade version of coating combine the coconut oil and maple syrup well then stir in the cocoa powder until all the clumps are gone.

After your dough is firm use a tablespoon to shape into 9 balls, and roll them in your hands to warm up if needed. Then dip in the chocolate coating (I used my fingers because the fork kept crumbling out). Freeze the chocolate-coated balls for about 20 minutes until the chocolate is hard. If used the coconut oil coating, store in the freezer and microwave when needed. If used chocolate chips, store in the fridge.
