Chocolate-Chip Cookie Oatmeal Porridge



Have you ever just wanted a dessert in a bowl, no chews or forks required? I have! I get it all. the. time. If I had it my way, all deserts would be served hot in a bowl, with some cold vanilla ice cream to make everything all messy and delicious. 

I'm literally salivating here at the thought of this, folks.


However, I agree, some things are just meant to be eaten with a fork and knife. Like... okay I can't think of a single thing right now. Pie? Bowl. Cake? Bowl. Cookies? Bowl.


Seriously, this chocolate-ship cookie bowl is not to be taken lightly. It's the real deal. Buttery, ooey gooey, melt-in-your-mouth chocolate chips, the works. The main superstar ingredient to make this taste like cookies and not just cookie dough is the coconut oil. For some reason it makes a heck of a lot of difference.


I originally planned to eat this as an afternoon snack (see, it's healthy!), but after one bite of this I decided it was for dessert. I can still remember the surprise on my face... and when I kept sneaking huge bites on my way to the fridge, not wanting it to go away for later.

Chocolate-Chip Cookie Oatmeal Porridge 


  • 1/2 cup dry old-fashioned oats
  • 1 1/2 cups water
  • 1 tbsp coconut oil
  • 1 tsp maple syrup
  • 1/2 tsp vanilla extract
  • pinch salt
  • 1/4 tsp baking soda
  • stevia equal to 2 tsps sugar
  • Chocolate chips
Cook your oats and water in a 4 quart microwave-safe bowl until they are almost fully cooked, but not yet. It is 3:30 minutes for me, as opposed to 4:00. Once you have microwaved your oatmeal, give it a nice, long stir. It should still be really wet. Then, set the bowl in the fridge for at least 3 hours. After 3 hours have passed, add in the coconut oil and heat until warm serving temperature in the microwave. Add in all ingredients except chocolate chips. Lastly, place chocolate chips on top and enjoy! I like to microwave it for a few seconds after this step to make the chips all gooey.
