Pumpkin Pie Squares


It's fall, the best season for scents (Bath & Body Works' Pumpkin Pecan Waffles candle is amaze!), photos (Beautiful leaves, sunsets, and pumpkin patches), coffee (Pumpkin spice lattes), and, of course, food (Thanksgiving!!). What do all these things about Autumn have in common...? PUMPKIN!


I am in love with pumpkin right now. I am currently eating one 16oz can per week... even eating it plain is fabulous. 


However, one of my favorite ways to use pumpkin is in these pumpkin squares. I was originally planning to make a delightful no-bake pumpkin pie slice that was super easy, but I decided to make it into cute lil' squares instead! So, in conclusion they taste like pumpkin pie.

 "You so badly want to dig in but you slowly take your time to scoop up that first bite. The crust crumbles as it hugs that gooey filling warm and sweet."

With no crust (The filling's always the best, right??), these squares are super satisfying and yummy. I eat the whole batch for a snack sometimes... they're that good!!

Pumpkin Pie Squares 


  • 1/3 cup pumpkin puree
  • 1/2 cup oat flour
  • 1/4 tsp cinnamon
  • 1/4 tsp allspice
  • pinch nutmeg
  • 1/2 tsp vanilla extract
  • pinch salt
  • 1 tsp pure maple syrup
  • stevia equal to 2.5 tbsps sugar
Mix all ingredients together in a medium bowl with a fork or spoon. Then in a flat-bottom Tupperware or pan or something, press the pumpkin dough into a layer about 1/4 - 1/2 inch thick. With a piece of wax paper, press down on the dough to make it smooth and flat (optional). Then freeze until firm, but not too long, and eat. Store in the fridge.
