Healthy Cake Batter Pudding (For Breakfast)


Welcome to Sparkles 'n' Spoons! This is my first blog post, and I chose this recipe because it's good. Really good.

                           

It tastes like authentic funfetti cake batter. I'm not kidding. On my first spoonful I thought, "Wow, this actually tastes like real cake batter, but thicker!" I was pretty surprised. 

It's like when you make cupcakes... Isn't licking the spatula the best part?


 Of course it is, and now you can eat a full bowl of it.



This recipe is so healthy that you can definitely have it for breakfast. And it's so darn delicious that you can eat it for dessert!

Healthy Cake Batter Pudding

  • 1 serving (1/2 cup) cooked oatmeal
  • 2 tbsp softened coconut butter
  • 1/2 tsp vanilla extract
  • Stevia, to taste
  • Sprinkles (optional)


Add in all ingredients except sprinkles to a blender (I used a Vitamix) and blend until smooth. Serve in a bowl and top with sprinkles. If the oatmeal you used was hot and you like your pudding cold, put bowl in freezer for up to 30 minutes.
