Cinnamon Roll Quinoa Bowl


Ahh, the classic cinnamon roll. Ooey, gooey, and oh-so-yummy. Mmm.


And then there's quinoa. Nutty, bland, and my dad and sister's very least favorite grain. But it's a complete protein and a major superfood!


What happens if you combine the two? Disaster?
...or Nirvana?

If you guessed the latter, you are correct! This quinoa bowl tastes so amazing, it's hard to believe that it's super healthy with 19 grams protein, zero sugar, and only 250 calories for the whole recipe, including the streusel and cream cheese frosting! And the cinnamon struesel... possibly the best mistake I've made in my life. I was trying to make a cinnamon drizzle, but using almond milk instead of water yields a crumbly texture instead of runny. Yum! Oh, the healthy cream cheese frosting is the bomb, too. I made 6 batches of it trying to get the perfect taste, and used 2 servings of it on my bowl it was so good! 

Long story short: This tastes like a scrumptious authentic cinnamon roll!

Cinnamon Roll Quinoa Bowl 




Quinoa:

  • 1 serving cooked red or white quinoa (1/4 cup dry)
  • A few splashes almond milk, depending on your desired consistency
  • 1 tbsp vanilla protein powder
  • pinch salt
  • 1/4 tsp vanilla extract
  • stevia, to taste
Cinnamon Steusel:
  • 2 tbsp vanilla protein powder
  • 1 tsp cinnamon
  • extra stevia if your protein powder isn't sweet enough
  • a few tsps almond milk
Cream Cheese Frosting:
  • 1 tbsp low fat cream cheese
  • 1/8 tsp vanilla extract
  • 1 packet stevia

Stir almond milk into the cooked quinoa. Now would be the time to microwave your quinoa if it's cold. Then stir in the rest of the ingredients for the quinoa and set it aside. 
In a small bowl, combine the dry cinnamon streusel ingredients together. One tsp at a time, add in the almond milk until a clumpy texture is reached. I did 4 or 5 tsps because my protein powder is very thick and dense.
In another small bowl combine the cream cheese ingredients together. 
Sprinkle the struesel and pour the cream cheese frosting onto the quinoa and enjoy!

    I was really inspired by your cinnamon streusel quinoa breakfast recipe. So I tried to make it this morning and I'm eating it right now. I didn't have all the ingredients, so I modified it a little bit. I use quinoa, cinnamon, chocolate protein powder because I don't have vanilla, coconut flakes, chia seeds, and regular soy milk. It looks like a big bowl of chocolate protein powder soup. I'm eating it and it's OK, but I think your original recipe should taste much better than mine. 😁☕️ - Uncle Todd

  2. Cool, thanks for trying it! I'm sorry your quinoa ended up like soup, I'm guessing you didn't strain it. I first ended up with soup, so that's when I had to improvise and get out the colander! I'm going to update the recipe so no one has to go through the trouble of staining it. :)
