Chocolate Peanut Butter Overnight Oats Trifle Parfait


When I think of fall, I think of these parfaits. Weird, huh? I have reasons though.


First is that I invented these delicious parfaits last year, in the fall. That was when I first started hearing about overnight oats and decided to try them. From there I began experimenting with them, adding less milk to make them thicker for parfaits, blending them into smoothies, etc.


They also make me feel like fall because they are perfect for fall breakfasts! In autumn it's too cold to have a freezing smoothie, but too warm to have a hot bowl of oatmeal. So this is my happy medium!

This is my very favorite way to eat overnight oats, because I just don't like the usual soupy, soggy, mess. Plus, it feels like you're eating dessert for breakfast!

Chocolate Peanut Butter Overnight Oats Trifle Parfait 



Chocolate Oats:

  • 1/2 cup old-fashioned oats
  • 1/4 cup + 2 tbsps almond milk
  • 1 tbsp unsweetened cocoa powder
  • 1/4 tsp vanilla extract
  • 1 1/2 packets stevia, or 1 tbsp sweetener of choice
Yogurt:
  • 1 6oz container vanilla or plain Greek yogurt
  • 2 tbsp peanut butter
  • sweetener to taste if using plain yogurt

optional: peanuts, chocolate chips, cacoa nibs, extra peanut butter, whipped cream :)

In a medium (2 cups) bowl, add in all Chocolate Oats ingredients. Then either stir to combine or fasten the lid on and shake until combined. Set in the refrigerator overnight.
In the morning, give the oats a stir, and stir the peanut butter into the Greek yogurt, until there are no globs and it's very thick. Lastly, using a large glass layer the oats and yogurt, placing a few peanuts on top of each oats layer (if using). On top, sprinkle optional ingredients of choice and enjoy!
