I've been on a major cottage cheese kick lately, and have gone through a ginormous Trader Joe's container in less than a week! I've had it in smoothies, sweet bowls of it with protein & cocoa powder, sweet dessert bowls with chocolate sauce and coconut extract, and today's recipe: savory cottage cheese bowls. They are soooo good.
My favorite part about this colorful bowl is how you can be creative! This is just a basic guideline, and you could toy with different combinations to your heart's content.
Eat this for breakfast, lunch, snack, or... well never mind about dessert, this is savory!

Savory Cottage Cheese Bowl
- 1/2 cup low-fat cottage cheese
- 1/2 a ripe avocado
- 1/4 cup cooked garbanzo beans
- black pepper, to taste
- other optional add-ins: tomatoes, cucumbers, various nuts, chia/hemp seeds, more beans, etc. My favorite is black beans with a touch of garlic powder and salsa for a Mexican twist!
Place all ingredients in a bowl on top of the cottage cheese and enjoy!
